Brenda has changed the face of food in the Twin Cities
What can I say, Brenda has changed the face of food in the Twin Cities. Years ago, she ushered in the farm to table movement, before it was fashionable. Fine vegetarian/vegan dining. Organic produce, etc. Cafe Kardamena in 1978, then Cafe Brenda in 1986 and now Spoon River.
She not only introduced many to things like Miso and Tamari, she created several cookbooks, taught classes, mentored chefs, encouraged/supported suppliers which raised awareness and the level of our midwestern palates. (Not to mentoion the effect on our health and wellbeing. )
Minnesota would not be the same without Brenda.
She has earned this coin, and all of our thanks and gratitude!
